Last night we went to see Pan's Labyrinth. It was a very ...brutal movie, juxtaposed over a great child's fantasy. Tim said Bill summed it up over this past weekend with "It's a great movie that I never want to see again." It really threw Tim for a spin last night....not many movies do that. It was worth it to go to the movies on a Tuesday though, popcorn was cheap, the soda was ridiculously small (but it makes me laugh to even look at it...uncontrollably really...it's so tiny). There were like 6 other people in the theater, it was great! I think we need to do that more often.
Tonight, will day 8 of ice skating in a row. I am getting MUCH better. I can even go backwards -- not far, but I don't fall down. When I started last week I couldn't even make myself go backward...it seemed impossible. It's amazing what practice does for you.
We are having jambalya tonight. I cheated an got a rice package called: Louisiana: Cajun Jambalya Mix. I think I'll probably end up adding a can of diced tomatos to juice it up, with chicken and kielbasa.
Also, the lady at the ice rink - Lynn - told me that she ate green olives with cottage cheese for dinner the other night. She said it was something her mother used to do, and it was one of the few things she copied. (ha ha). I am going to try that tonight I think.
Tonight is also craft night. I am meeting with Hilary, Stephanie and possibly her friend Bonnie at that lounge place underneath the brass ring. Watch, it's going to be rented out or something. Crap. I don't have any money...oh wait, they have an atm there. I guess that is okay. Or maybe I can convince Hilary to stop at the credit union on the way there....save myself some fee money. Maybe I'll tell her if she does that then it's a"coupon" off on her next drink.
Okay. The Baked Rice pudding was great and super easy to make.
Baked Rice Pudding
2 cups of cooked short/medium grade rice (I actually ended up throwing all of the rice from my once cup of rice to two parts water...which was probably 2.5 cups...but it was fine.)
Combine and beat until blended:
1 1/3 cup milk
2 large eggs
6 tablespoons sugar or packed brown sugar (I used brown sugar)
2 tbsp unsalted butter, softened (I usually melt it in the microwave first)
1-1.5 tsp of vanilla (less if using lemon -- I didn't)
*optional - I added 1 tsp pumpkin pie spice
1/8 tsp salt
[I wonder...if you use salted butter, would you just omit the salt? Luckily I still have unsalted butter in my house, but I wonder....]
Add the rice, mix, and pour into a greased 1.5 quart casserole in preheated 325 F oven and bake for 40 minutes.
If desired, you can add:
raisins or chopped dates (I added raisins to 1/2 of it because Tim hates them for some ungodly reason)
1/2 tsp of grated lemon zest
1 tsp fresh lemon juice
There you have it, it was awesome, easy to make and uses simple pantry ingredients.
